Zesty Cranberry Orange Muffins

With Fall at our doorstep I have found myself wanting to do a lot of baking and cooking.
It always makes me feel good to make something nice & tasty for my family or to take to someone else!
I made these Cranberry Orange muffins today and thought I would share the goodness. Here is the recipe:

Muffins
2 c. Flour
1 t. Baking Powder
1/2 tsp. Salt
1 Egg
11/2 c. Sugar
1 tsp. finely grated orange zest
1/4 c. (1/2 stick) butter melted
11/4 c. Sour Cream
3/4 c. Cranberries

Glaze
1/2 c. Sugar
1 tsp. finely grated orange zest
1/4 c. Orange juice

For the muffins mix all of the dry ingredients together in separate bowl and set aside.
Mix the egg and then add one at a time (mixing well)the sugar, orange zest, butter. Then gently fold in half of the sour cream, fold in other half. Gently fold in cranberries until they are evenly distributed. Add the dry ingredients a little at a time while folding in gently. Put into muffin cups or greased muffin tin and bake @ 350 degrees for 20-23 min.
Cool muffins on baking rack for 5 min. While letting muffins cool, add 1/4 c sugar and 1/4 c orange juice to a medium sauce pan and let simmer over medium heat (stirring occasionally)to make a nice syrup. Combine 1/2 c sugar and 1tsp orange zest in a bowl until zest is evenly distributed. After muffins cool for 5 min. brush the tops with the syrup. Dip the tops in the sugar/zest mixture and they are ready to enjoy!
